Lemon Bars By Judy

Ingredients:

Crust
1 Cup Flour
½ Cup Butter
¼ Cup Powdered Sugar


Filling
2 Eggs
1 Cup Sugar
½ Tsp Baking Powder
¼ Tsp Salt
2 TBL Lemon Juice


Preheat oven 350

Blend flour, butter, powder sugar. Lightly grease a 8x8x2 baking pan. Add the crust mixture and press evenly in pan, only go ½ up on the sides. Bake for 20 minutes.
For the filling, beat the eggs, sugar, baking powder, salt, lemon juice.
When well mixed, add ingredients to crust and bake for an additional 25-30 minutes. I found that when you can touch the corner and no print shows, it’s done. Next lightly shake powder sugar over dish and chill for 1 hour.
